I’m a rare, high mountain yellow tea from China’s Anhui Province (also known as liquid gold)! I have a smooth, delicate flavour that is a beautiful alternative to green tea.
I taste like:
Smooth, delicate and beautiful herbal goodness. You may even pick up on my very gentle floral or ever-so-slightly savoury notes. I’m not too strong or weak, each sip is just right!

More about Me:
In ancient China (during the Ming and Qing Dynasties) I was reserved exclusively for Chinese Emperors in the imperial court as a Tribute Tea as the Emperors loved the colour yellow.
I’m rare because I am only grown in a few, select areas like the high mountains in the Anhui Province.
My harvesting is limited (unlike my cousin, Green Tea, I’m picked in early spring when my leaves are young and delicate). Only the tips from the best quality leaves are preserved, resulting in a more subtle and unique flavour that is smooth, less earthy and has higher levels of antioxidants.
The drying and steaming process is time consuming and requires great skill to achieve the perfect balance for a silky taste and texture. It is undertaken by true tea masters who specialise in this special variety.
Yellow Tea is mostly similar to the process of green tea but with the added step of Sweltering
Warm humid leaves are wrapped in cloth or thick paper
At intervals the tea is panned fried again and re-wrapped to cool and oxidize slightly this is re-peated several times for up to 3 days.
