I’m rare because I am only grown in a few, select areas like the high mountains in the Hunnan Province Province.

Not many farms are producing this tea as it is very time intense
This gorgeous tea goes through an extra process to green tea,

Sweltering or also known as “Seal Yellow” –
warm humid leaves are wrapped in cloth or heaped into a bamboo basket with a cloth covering them. At intervals the tea is panned fried and re-wrapped to cool and oxidize slightly this is repeated several times for up to 3 days

My harvesting is limited (unlike my cousin, Green Tea, I’m picked in early spring when my leaves are young and delicate). Only the tips from the best quality leaves are preserved, resulting in a more subtle and unique flavour that is smooth, less earthy and has higher levels of antioxidants.

The drying and steaming process is time consuming and requires great skill to achieve the perfect balance for a silky taste and texture. It is undertaken by true tea masters who specialise in this special variety.

I’m a great tea to start your morning with, or as a late afternoon or early pick-me-up. Try me after a meal to aid with digestion.

Steep 1 teaspoon of tea (2g) into a cup – steep at 85 °C for 2 – 3 minutes

If you like your tea to be stronger just add an extra teaspoon of tea next time and steep at the same time and temperature
